Keen interest in cooking courses

Apprenticeship numbers at TAFE SA have been rising over the past few years, with the commercial cookery course in particular demand.

However, as cookery lecturer at TAFE SA Mount Gambier Ian Perry said, there are certainly still more jobs than there are apprentices.

“I know of several places that are looking for apprentices in commercial cookery,” Mr Perry said.

“We simply haven’t got the numbers to fill these spots

Apprenticeship numbers have been steadily increasing from 10 in 2007 to 22 this year in commercial cookery alone.

These apprenticeships include a four-year industry placement that provides them with the opportunity to continue at their place of work.

Kent Comley, from The Barn Palais, said the two TAFE SA students who he currently employs are valuable members of the team.

“The Barn currently employs two apprentice chefs who are attending the Mount Gambier TAFE, and follow a long line of apprentice chefs who have completed their apprenticeships here,” Mr Comley said.

Educational manager for commercial cookery Peter Christie said one advantage of apprenticeship was that “as employers train them (the apprentices) up, they generally don’t want to lose them once qualified.”

“What’s more, a very high percentage of TAFE SA apprentices complete their training,” he said.

First intake TAFE applications are up 30pc across the state for 2010, with the second intake beginning in January.

    The Limestone Coast is very much in demand for hospitalty courses. It would be a tremendous bonus if a regional TAFE campus of Cordon Blue could be set up
